Impressed by the flavors from today’s 9-course menu, I went back to the website to read more carefully about the professional journey, the stories, and the processes behind the creation of the refined high mountain cuisine. My personal favorite from the experience was “Tradición” (the chef’s favorite rice) and it made me smile to find fresh pea shoots here in Formigal. It feels that both Chef Diego Herrero and his partner Amaya Sarasa have a deep emotional connection to the land, the mountains, and what nature in this part of the country has to offer. They truly elevate the flavors with their understanding of which ingredients pair best together and when. It’s all there in each dish—the love for the land and their commitment to elevating local produce from small-scale farmers and wine producers. I also adore the cottage-like, heartwarming setting, the absolutely welcoming team, and the authenticity—non-pretentious, exactly as one would expect to encounter in the mountains. It’s absolutely worth it for the largely organic ingredients, the passion, and the representation of potentially overlooked local, small-scale farmers and mountain cuisine in this part of Spain. this is a fantastic restaurant! He makes impressive combinations of flavors in his dishes, offering the best of local products fused with local and Asian cooking techniques and flavors. Its menu is an incredible gastronomic journey through the knowledge acquired throughout the life of the chef. The presentations are fantastic and the treatment, being a small dining room to pamper its customers, is simply spectacular. Little is valued for what they deserve. thanks for the amazing experience

Great novel cuisine in Formigal, where the rest of the restaurants serve only roasted meet. A bit pricey.

Easily 10/10. Took care to prepare a special vegetarian degustation menu for us at short notice and was one of the best we’ve ever had. Excellent wine wonderful staff and service. Staying in Formigal ? Must eat here

Chef Diego Herrero and his staff go above and beyond the normal duties of a top restaurant to deliver 7-9 amazing courses to ultimately happy (if a little full) guests. Such a gem to find in a small mountain ski town, but then Sallent de Gallego and Formigal are full of lovely surprises. Prices are shockingly reasonable for a Michelin starred restaurant and wine list is an excellent survey of top/interesting Spanish wines.

My husband and I dined at this lovely restaurant beginning of June 2021. Warm and cosy place, very welcoming hosts, the menu wasn't complicated at all and the food was amazing! Jesùs was attentive serving us and Chef Diego (I hope i got his name right), was super humble and fun to speak with. Overall we had a wonderful night. We'll recommended to everyone you'll never go wrong

Second time visiting to celebrate a birthday and second time we've both left completely satisfied. Great food, great service and a good wine list and recommendations (key for me) Staff are super attentive and explain the source and inspiration of each dish (usually with the head chef/founder) Very happy a second time.
